A lot of people have chosen to go with the S-10 because there are a lot of after market parts for V8 conversions using a SBC. A ford ranger chassis will work but if you're using a chevy v8 than it would be easier just to use a S10 chassis. You'll probably have to make custom motor mounts unless they make chevy motor mounts for a Ranger? Something to think about.
Also, you'll want to keep an eye out for a regular cab short bed truck. They are easier to use because you could just relocate the spring perches forward with bolts.
One more thing. You beetle on a ranger chassis will ride at the same height the ranger does, high up. Rangers front suspension camber becomes weird when you lower them.
